Well I compete in offroad rally (took a break from it this year)...I watch F1 and MotoGP when I get the chance.
If I had boat money a Jet Sprint might be my first choice to buy.
It changes over time as the series change, and it depends on if you are talking about televised motorsports or motorsports in general.
For televised, In the 80's and 90's I would say CART/Indycar. Now I would say NHRA. I still like Indycar, just not as much.
In general I probably like Rally, go-kart and off road racing better than both of the above, but the TV coverage isn't as good.
Motocross, enduro, hare scrambles, GNCC, rally, desert racing, pretty much anything offroad gets a thumbs up from me. Not into drag racing even though I dabbled in it back in da day. Won't flog on NA$CAR any more than it's been flogged on already.
Almost anything openwheel.
Anything rally.
Roundy-rounders on a road course. (Nationwide is going to be at Mid-Ohio this year!!!)
Desert racing (Baja, DAKAR, etc)
Hillclimbs of any kind.
Most of the bike stuff they do at X-games is intriguing. For some reason, I just can't get into Supercross.
Moto racing is pretty cool...

"wheelin" grab your friends and your trucks and go hit the trails, possibly camping.
and of course, rally and ice racing (the wheel to wheel kind of ice racing)
Rally and jet sprint. Sometimes up here in the PNW if you're doing one, you're doing the other at the same time anyhow.

I look at that slip angle and my tail gets all bushy. Them fellers are crazy but I mean that in the nicest way.

Also dig rally, though while I agree wholeheartedly with Adrian's enthusiasm, I'm not 100% sure I can convince myself that it's separate enough for the OP, given that the Venn diagram of cars involved in rally/autocross/road racing looks a lot like this: O
Shooting E36 M3 with guns. Unfortunately I don't get to do it any more.
I would love to get an old trail bike and do some cow trailing.
Screw MotoGP, bike club racing is even more Grassroots than anything on four wheels, mostly because it's CHEAP.
