I love the unique vtwin look.
Any others worth mentioning? The use would be daily rider. It would be nice if it was a little sporty, but something that's just a laugh to ride around is #1.
If you want cheap you've already set your parameters - the make and model are secondary. Just get the bike in the best condition you can that's within your price range.

There is a lot of work to make a CX500 look like that.

However something with a half-decent spares supply wouldn't hurt either so I'd take that into account, too.
Seconding Tim's recommendation, I'd look for a Honda, then targets of opportunity. Honda parts are usually the cheapest.
What other bikes have a note worthy vtwin look?
Lots of ads these days, would be nice to have something to look for.
I sold my 2000 SV650 for $2000 a couple years ago, I have seen a few cheaper than that since when I have been looking. I have seen a few projects around $1k even.
I'm thinking of hanging around for the virago 920. There were two years where they were monoshock and chain drive.
I wish I had kept my CX500 to do something similar to. Its a great bike, but I'm pretty sure that you are the first to ever get a hard on over one. You might want to get that checked if it lasts for more than 4 hours.
I have never had a problem finding a CX500, they seem to be available for $1000 any day of the week.

You might be able to find a cheap Monster or Thruxton/Bonneville. You can build an SV650 to look anyway you want. I'm slightly biased, though, since my first bike was a K3 SV650S.
Not old but fun, vtwin, and cool. By the time you get a cx500 to look slightly less hideous you could have a fun reliable sv650 for the same price and a great daily rider.
