What are the “knife” style brackets called - the kind that tuck into a seam between dashboard panels?
I have a pop socket on my phone (yeah, I’m thirteen) and they only make stick-on style or the kind that go in the HVAC vents. I don’t like the vent type and I don’t want to stick it directly onto the dash.
I’d like to get the adhesive type and stick that on a flat plastic or metal surface rather than directly on the dashboard.
I bought a panavise solid mount for the Mustang, mounts to the same screws as the HVAC controls on the SN95. I like it quite a bit.

I don’t like having anything obstructing my line of sight.

Its usually about 2 inches round and hangs down into the dashboard so its minimal how much it blocks
John Welsh recommended the iOttie holders a couple years ago. We have them in a couple cars and they work well.

That's what I was coming in to recommend. Proclips are the ones that fit into a gap in the dash, then you can attach your actual phone mount to the Proclip. I've used them with Ram Mounts and iOtties, they both use a standard AMPS mount, which all Proclips have.
ProClip mounts offer a number of mounts custom made for a dash, although some block vents, which I'm not fond of. The mount offered for my 2017 Grand Caravan is like this. Some slot into gaps between panels that look really clean - the MINI R53 and VW Jetta Mk IV mounts are like this. It depends on what car you have.
I almost started my own "What cellphone mount" thread for the new-to-me BRZ. I have a Ram Mount I tried in the WRX then Miata, the suction cup fell off 3 times & I gave up. Luckily the $1250 Miata I didn't mind buying the mount you physically attach with 4 screws to the console.
The BRZ had a Go Pro mount stuck to the top of the dash, and I ordered this from Amazon hoping it works out:
Thread back from the dead it seems.
But for me, I use a mount that goes in the very unused CD player slot, works pretty darn great.
