There's a E36 M3pile of Asian joints local. I can get any kinda egg just about.
I've sometimes bought quail eggs from an Asian grocery and boiled a batch of them to bring to pot luck breakfasts. They're perfectly bite-sized, and take about 3-5 minutes to hard boil. If I really wanted to confuse people, I might crack the whole box into a skillet to get a sunny-side-up egg with a bunch of centimeter sized yolks.
That's brilliant. I should do that.
Thanks to this thread, I've had eggs the last two days
I've been trying to work out the best place to put a coop on my property since this thread started.
I learned before, ducks will dig themselves out of a fenced in area, so it makes finding the right place tricky. Isn't there a thread about that somewhere?

For the next step up in eggs find a source for duck eggs, they have those qualities you described in the good chicken egg but even better. However, cooking them well done tends to ruin them (rubbery), so work on that first.

I love eggs. Some of the open field chicken eggs are extremely orange in the yolk. None of the grocery store options look as orange though, even the ones that say they are free range. The orange yolk ones I got were not cheap though.. back alley kind of deal through a guy who knew the guy. But like you say, when you get really good quality eggs you can taste the difference.
My son was curious and made a quail egg omelette (eggs from the Asian market). Looked very strange for sure.

The America's Test Kitchen recipe for perfect soft boiled eggs: (in my own words)
- 1/2" to 3/4" of water in a pot with a lid. The pot should be big enough to hold all the eggs in a single layer with a bit of room.
- Bring to a boil.
- Carefully place eggs in the pot and boil 6-1/2 minutes
- Immediately pull the pot off of the burner and run cold water into the pot for 30 seconds. Turn the pot slightly to let the water run over one side.
- Promptly remove the eggs and serve
Those little Dash cookers you can get cheap on Amazon actually do a very good, repeatable job with almost no cleanup. Especially for poached eggs, which usually turn in to egg drop soup when I try them any other way.

Chickens are stupid. I don't think they dig. My fil used to keep them in one of those mesh corn silo things he has next to his barn. Chickens sat there and did chicken stuff. I would advise putting it somewhere you won't catch an easy breeze to the house, those berkeleyers smell NASTY.
