Bang for buck, 08' up hayabusa.
More bang for buck if 170hp will do, pre 08' Hayabusa.
ZX14 has monster HP and no car-application support, ie. oil pans, headers.
BMW S1000RR was the big HP/light weight champ for the national caliber SCCA DSR cars 'til someone spent a million dollars developing a 670cc turbocharged, destroked Suzuki GSXR1000 powered car last year and was first car ever under 2 minutes at Road America at the runoffs.
The latest Hayabusa makes 197hp, 172 at the wheel, and 102 or 98 ft/lbs of torque.
I'd say for a car application, look at crank power, rather than wheel power.
I'd say a first gen zx10 engine + small turbocharger would fit the bill quite nicely.
My friend has a zx10 and is in the process of trying to get one of the Muzzy's built turbo dragbike zx10's now. That one used to make 240 on the wastegate spring and up to around 500hp on high boost.

So a boosted 'busa seems to be the winner. I'm looking at putting this combo in a Thunder Roadster and making it a fun track day car. Doesn't need to fit any rules or anything, just a safe open track day car that's insanely fast. Probably get a used car with whatever engine is in it and build the updated engine as I can and rack up seat time while I can.
Boosted 'busa engine would be my guess, seems you see those all the time so you'd probably have an easier time getting parts and support from forums and such.
The busa and zx14 will offer the best aftermarket, parts prices, and support. I love my k1200s (167hp stock/ the k1300s is 175hp), but finding performance parts for it, let alone getting any forum support, is a huge challenge.

Well yes and no. It may not be a bike engine, but it's definitely an engine on a bike, and you could/can buy them that way new.
I actually saw one one those V8 bikes this weekend. Looked pretty neat except the guy was a typical Harley shiney happy person revving the E36 M3 out of it for no apparent reason while passing through a quiet small town.
When I was a kid I wanted an Amazonas. They were sold in Canada for a very short while. All the size and none of that good V8 power........

This uses a 1.8 litre Mazda V6... Where the 1.8 fits, the 2.5 fits. 200hp in stock form with the "ZE" variant, not a ton of work to make 240whp n/a, i'm shooting for 300whp n/a.
Boosted, the sky is the limit.
But i suppose this isn't really within the spirit of the thread.

Triumph claims 147 ft.-lbs. of torque at 2,500 RPM and 140HP at 5,750 RPM for the oversquare fuel-injected mill.
So while it's got a decent amount of torque it's way down on horsepower compared to a lot of bikes.
OP, The ZX-14 is todays undisputed King. Everything else (including the Hayabusa) is just that, everything else.

that torque would be nice to have for a street car but for a track car he'd probably want a 'Busa/ZX or something.
