LONDON (AP) — Racers dressed as a skyscraper, beekeeper and a chest of drawers were among dozens of runners in zany costumes zipping around a central London square with a frying pan in hand to celebrate Shrove Tuesday, or “Pancake Day.”

Hundreds of people packed into Guildhall Yard, cheering as participants in the annual Inter-Livery Pancake Race ran around the square while tossing pancakes in their frying pans.

This reminds me that there's joy in the simple things of life. All it takes is a costume and pancakes. To be fair, that does sound like a good day.

It started in Olney in 1445, and has competed against Liberal, Kansas since 1950 in the International Pancake Day Race. USA has the lead in the series.

At my house Sunday is Pancake or Waffle or French Toast Day.

Come to think about it, I have been Pancake\Waffle\French Toast free since my wife died.  Gotta work on that!

Depression is a bitch!  I have a call in to my Neurologist to raise the dose on the antidepressant.

My wife has a gluten allergy, but loves the pancakes I make for her.  

1 C oats

1 C cottage cheese

2 Eggs

Blend until smooth, add a touch of milk if too thick.

Fry like normal, sometimes I'll add a touch of butter to the first batch.   I normally double this recipe for leftovers.
