I keep seeing Molle being used in off roading, backpacking, and Bikepacking, but finding any information about how it actually works seems harder than it should be. Does the hive have any information to impart?

Assuming that this is the molle you're referring to:
Yeah. The military uses the hell out of it. I think that was the origin, and it has migrated to everything else because it works pretty well and its TACTICOOL!
Theres a "base", like above, with straps sewn on at regular intervals, and attachments with longer, stiffer straps sewn at one end and with snap closure at the other end. Weave the strap on the attachment through the straps on the base, then snap the attachment strap back to itself to secure.
As long as you're comfortable using camo patterned gear, the Army is phasing out the old grey-green digital camo and there ought to be a proverbial mountain of surplus molle cropping up at surplus stores for way cheaper than you will pay for new stuff.
It's a system for attaching extraneous gear so you can carry more without having to find room inside a pack or pocket basically.
Yep, that's the long and short of it.
Soldiers need to be able to quickly grab, say, a new magazine for the rifle, and each shooter has their own preference on where they want to grab from (alternatively, each Sergeant Major has a preference on where they want their soldiers to put their magazines on their gear so that everybody looks the same). Molle allows that level of customization without sacrificing standardization of the pouch attachment system and the base. Because it is standardized, it also allows the plethora of gear manufacturers to design attachments for damn near every possible application.
The military uses molle on ballistic armor, lightweight vests, rucksacks, day packs. We hang stuff everywhere.

Ya...that is why I am here. It's lunch time and as a closet Puerto Rican it triggered my appetite!

Actually identify as a French-Puerto Rican-Catholic-Jew from NIgeria. Born in the USA and living in Canada. So lets just say the range of stimulating cuisine is pretty broad!
