The colors are determined by the kyber crystal inside the hilt. According to modern canon (ie disney-owned lucasfilm) the crystals do not have color until the force wielder imprints themselves/ bonds with the certain crystal. Thus each blade color is representative of the one who built the saber. Anyway, check out ATAT-chat or StarWarsTheory on yt for more nerding.
