It's basically a custom project with rust. While you can probably part it out and make a little money. It's at least $1000 over the market
If you are willing to accept a non running XJS you don't have to buy a lumped car of unknown quality. $1000-1500 should get you a semi decent one that merely needs to get running. .
It may be scary buying a non runner but it's the same as any car . First find out if you have spark. If you do have spark then it's the EFI Without OBD2 most guys are lost but the Jaguar Forum has a a lot of help. It tends to be cheap to fix too.
Never have I pulled apart a V12 and found it worn out. A dropped valve is really the only likely thing wrong and that can be detected with a 1&5/16th socket and long handled ratchet If it turns over freely ( clockwise as you look from the front of the engine ) you're gold. Even if their is a dropped valve a good used one can be found very cheaply. Cheaper than a Chevy engine.

I still come across them at those prices. lumped Jaguars that haven't run in 4 years? And are rusty? There is a complete body for sale, come and get it on Facebook. $1 asking price but if not taken in a week it's going to be scrapped.
To most people the non running car is junkyard bound. People don't restore lumped Jaguars because even getting a Chevy running is hard or expensive if having it done .
Later this fall there will be several to choose from as winter rolls in. There were 121,000 made more than 50% wound up here in America and almost 35% wound up in Southern California. With California's rules Re licensing a car that has sit for years can get insanely expensive not to mention passing the smog test.
Someone needs to go get that car. Sounds like you could easily part it out and get $1,500.00 + back, therefore it's worth taking a chance on.

You're pretty great at finding good value cars. Look for one in similar condition like your sedan. I'm sure your sedan is worth a lot more than you paid for it and it appears to be an excellent looking and driving car.
The high value gain is to take a non running XJS and get it running. Not overly complex or excessively expensive to do. The same principles that make any car run will make a Jaguar run. Spark fuel timing. If it was running when parked you can assume the timing is close enough.
If it's got spark then squirt some stater fluid in and see it it runs even for a moment.
If that happens. The EFI works the same way all of them do. Check the fuel pressure first 30 psi is about right. Go from there.

Honestly I wouldn't buy it to be a keeper car (I've never been a huge fan of how the xjs looks) but it sounds like it might be a good challenge car with not too much effort. Plus yes, it sounds like you can partout for profit if needed.

But F is gonna teach Robbie how much betta a jag is, and how to get one running, even though... well, we've all heard it beat to death. Soon he'll be telling us about all the ones he's worked on, what size and brand tire he ran, the thread pitch of a v12 intake bolt...

Back when the SBC was the "easy button" to put in everything, two of my favorite trucks at random cruise ins were a 79 c10... with a 500+ cu in Ford!
Other was a 90 S10 - with a Coyote swapped in. Love it
Would love to see F do it, just for the bragging rights. But I think it'd be a pretty cool car , no matter what!

Sorry I didn't understand, I thought you might like one. I can tell you from experience parting out Jaguars is not a quick turnover.
I do happen to agree that the XJ sedan is better looking ( that's Sir William's eye) than the XJS which he approved for production but had little input. That was more BMHC than Jaguar.
You'll understand if you read his story.

As far as a V12 in a C4 Corvette. It just won't fit. The V8 barely fits if you have the right pieces.
