Seeing prices around 10k for higher mileage BRZ/FRS. How are they holding up at this point? Have heard of oil consumption issues with various Subie engines and coil packs are hard to service. True here?

I bought one that had ~80k on it and now it has 92k. I paid 12k about two years ago so your figures sound about right. If you find one that's been well maintained and mostly highway miles, as mine was, you'll probably be fine. Look out for cars that have been abused and avoid those, obviously (lots of salvage title cars...). Otherwise car has been great. Fun on track and slow enough to still enjoy a little bit on the street.
I personally have no oil consumption issues, and coil packs are only an issue if you use on track for 2013-2014 models. Starting in 2015 they use new coilpacks that no longer overheat on the track. Mine is a 2013 and I had to replace a coilpack at the track, and it took about an hour, so definitely not hard if you even sort of know your way around the engine bay.
If you're going for track machine I think a 2015+ model with lots of miles is not a bad idea. You avoid the earlier stuff like coilpacks, and are most likely dealing with a car that sees a lot of highway regularly, so all a plus if you're going to beat on the car a bit.
15+ also avoids the spring retainer issue. I actually really miss my '15 BRZ Limited, which I had just put a more comfortable suspension setup on it and kept it.
I'm looking forward to what they do with the next-gen one.
Forgot these things call for premium gas. Will 87 octane nuke the motor after a while or just give up some power?
My '15 FRS is at 73k and holding up well. No issues with oil consumption, just routine maintenance, although mine is just a bone stock street driven daily.
Premium should be used, shouldn't run regular in them more than occasionally for 'emergency' use. That said nothing like being able to have a full tank of gas last you five twenty minute lap sessions... not too bad on fuel on track - at least for the only track day I attended with it one month after first getting it. How soon you looking to purchase and what kind of price range are you willing to look at? Ask because about to put my '13 FR-S with under 61k miles up for sale very soon, would make great track vehicle with the addition of suspension of choice and an oil cooler (must for track use), the stock suspension is still in great shape though.
Have full set of 4 brand new coils packs (P/N 22433AA652) ready for install and did have valve spring recall work done with new spark plugs and Exedy Stage 1 clutch installed - car is holding up very well 1000+ miles later and is running better now than it ever has before. Currently fabbing a Burns Stainless custom center exit exhaust system for it and it will have brand new pads (Winmax W3) and rotors (Centric blanks) installed and full fluid change done. Can give you a rundown/history of it via PM if interested.
Has not been problem free, being a very first early model bought before they were even officially released, but has never left me stranded anywhere and has had warranty work done [ECM replacement for the very early 13's]. Has always had ZERO oil consumption issue...but slight seep of oil on the valve cover which is the burnt oil smell owners report - haven't checked on seeping condition yet since having the valve spring recall work done (need to drop the aluminum undertray to be able to check it) but it doesn't seem to have the burnt oil smell like it use to have.
She's not stock, but the mechanical mods are all designed around better longevity of the car and future track use I was planning, specifically dealing with heat management issues and providing for quicker precision yet more stable handling.

Ha! No doubt!
As to regards about using 87, I wouldn't in an engine with compression this high. Sure the knock sensors will pull timing to save the engine, but if the 87 to 91 (93 if you live in a state with it) price is a concern, I wouldn't buy a car that calls for it.
I bought my 14 with 46k miles and a big stack of receipts for 12,500. It was pretty dirty though, but ran perfect and had been taken care of.
Or buy this one!

86,000 miles on my 2015 FR-S. Totally stock, zero issues, uses less than a quart of oil in 7500 miles. By far my favorite of the cars I've owned.
