Very limited pictures and videos out there...mostly just the whiners and criers on the Chumpcar forum. These guys showed up with a lot of resources, maximized the rulebook (and maybe then some) and then laid waste to the field. Some dumbass antics got them DQ'd. (Drifting past pit out after the checker and then going the wrong way on a hot track.) There's a video of that out there too.
But, if a team with apparently unlimited resources chose the 1UZ, there must be something to it.
It is a really pretty car.

Several of my friends were at this race & saw the radar gun showing ~160mph on this car. There was also a restart at some point during the race. After 2 laps, the car was roughly a full minute ahead of second place. It was pretty incredible. The antics that followed are unfortunate though.

There's plenty of room for them to have cheated, but I can't prove that they did, and I believe the swap is possible within the current rule set. Now whether a 160mph+ capable car on the "2x" suspension and brake rule, with stock aero is a good idea....Not sure. I like it and applaud the build.
1uz is significantly lighter, and shorter. Later gen motors can't take boost due to skinny rods.
Easy boost? 1/2JZ
300hp in a light V8? 1UZ
Easy 700hp, JZ
Built 1uz > built 2jz. Toyota swaps out JZ's for UZ's when they go racing.

On the cheap would be a W58. You can usually get them for about $200 to $500. At least around here and depending on the car it came out of.

The NA 2JZ-GE is the an evolutionary cul-de-sac of an engine family that harkens WAY back. Stock, they're smooth and run a long time, as long as you're okay with dismal fuel economy on premium and about 215hp. I love a straight 6 engine, but would opt for something a little saucier if I were going to the trouble of a swap.
Until the late 90's, everything upscale in Japanland had some kind of straight 6. There's a whole array of crazy low-displacement, high revving, force-fed L6 engines that we never got here. BMW also made a few L6 engines, I hear.
The 2JZ-GTE (turbo) engine is not just a 2JZ with a couple of turbos bolted on.

If you have the money you can get an adapter for either a 350z tranny or 300zx (2nd gen) tranny. Both are cheap and hold power well.

There are stock Yota transmissions that will bolt to it with factory gear. If you are having to adapt another makes transmission, the UZ V8s take a huge leap up IMO.
I think the W58 and R154 transmissions probably bolt right on to the 2-JZ engine. Many Aisin transmissions will probably fit, if you get creative. There was an article a while back of someone putting a 2JZ in a Soltice and reusing the stock Solstice Aisin transmission, with a bolt on bellhousing from a Supra.
Keep in mind that Toyotas are not like Chevys. A W58 transmission probablly does bolt up to a 2JZ block, but only with the right bell housing. And every block needs a different bell housing. So if you have a W5x from a RN Truck, that is only going to bolt up to a R series block, like 22R, 20R, 18RG, etc., without a different bell housing.
If you're going with a 2jz, then get the motor and trans together when you buy it. That way you know you have all the bits and that they work together. If you're going with a 1UZ, then you're blazing new territory and it doesn't matter.
Didn't I hear of a 2UZ or 3UZ motor in a truck or something with a manual transmission? If you can get that trans, it should bolt up to a 1UZ motor. Theoretically.
