This idea is all assuming that it could easily and cheaply be made into a serviceable tow vehicle.

That's all i was really worried about. Think i'll pick it up and find a place to store and figure out what to do about motor by this time next year.
That other thread floating around here about 400-ish lb/ft of torque should help describe some basic hop-ups if you're interested. The specs on that camshaft in the Jeg's page is basically a broomstick but that's not such a bad thing in a truck.
$500 would be an amazing price for one of these trucks, even here in the Midwest where they're supposed to be dirt cheap. Really can't see you making a bad purchase if you can get it for under a grand, as a pile of parts alone it would be worth that.
Edit: Noticed where you said it had a knock. My post still stands; you could pull the motor that's in it, replace what's needed and put it back together for not much money. Or get another one, swap, and sell of bits of knocky motor. Either way, this should be easy to do on the cheap, and these things are nearly as easy to service as your MX-6.

But again... it'll more than likely need engine work, it's got a knock.

Really, you can't go wrong. I'd buy it for parts to use on trucks I already own.
The front disk brake suspension setup will bolt onto trucks as far back as '63 (I'm not completely sure about '60).
I'd give $100 for the cab.
Transmission is worth something.
Those wheels, while not rare or incredibly valuable, are worth a little something. People like 'em (myself included)

Well, update on this.
I finally went and looked at it this past Sunday.
After listening to the seller's situation (he had $1000 to replace the truck with another beater if he couldn't fix it), and listening to the truck... i was a good Samaritan and informed him that he just had a loose rocker arm and some bad intake/exhaust gaskets, and that he would be able to get it fixed for well under $1000 even if he paid a shop to do it.
Shop quote came back today. They're going to charge him $500 for fix the rocker arm and check out the valvetrain thoroughly, replace all intake and exhaust gaskets, and replace the headers.
He's happy, and i didn't outright take advantage of someone. I can live with that.
The truck was seriously nice, underside is clean, interior in great shape (seats recently recovered), and the exhaust sounded pretty awesome. Nice magnaflow turndowns. I would have felt like i straight up robbed him if i took it for $200-$300.
