Regarding subarus: thanks for clarifying! I knew there was something you couldn't do, I guess I was thinking of tow dolly's.
It is worth noting that there is no blanket rule regarding what can and can't be flat towed. It's different from vehicle to vehicle, you can't just base your decision on drivetrain layout.
For example, Troopers have real transfer cases, but cannot be flat towed. And E30s have manual transmissions, and also can't be flat towed.
I'll suggest an early Bronco 1966-1977. Room for 4 but lighter and smaller footprint vs the later models.
Folks flat towed a Tracker for a couple years and didn't mind it, then bought a trailer and a Camaro. Total PITA. With flat tow it only takes a minute to hook/unhook. Loading the car on and off the trailer takes time, plus tying it down, finding somewhere to stash the trailer, and of course doing all this in the pouring rain....

It's rare to find an auto trans that CAN be flat-towed. The small list of them that is acceptable in the RV world is tiny in comparison to the list of auto-trans vehicles extant.
As would be the list of manual trans car you CANT flat-tow.
Honestly, i would go by whats known and accepted in the RV world, because it's a lot easier to start there than just pluck random cars out of the list of all vehicles in existence and then cross-check it with laborious searches of RV forums.
Miata wont work due to design of transmission. Check with RV center and see what they recommend. There are lots of cars that cannot be flat towed due to transmission design. No reason to experiment when this has been done for many years and miles.

Autozam AZ-1 would be nice too. I don't like the quality of Internet documentation of it, but Louisiana supposedly passed minitruck legislation allowing the Kei trucks to be registered for road use. Even if it were possible, federal regs require a 25mph limiter, and I'd be constantly hassled in jurisdictions that don't allow the trucks.
Otherwise, I might be looking for a Carry.
SWMBO and I have talked about similar when I get close to retirement. She mentioned pickup and camper trailer because that's what she kind of familiar with. I grew up RVing, parents had class A motorhomes. Drove a 25' Pace Arrow with a motorcycle trailer one summer cross-country. Later, parents went with pickup and 5th-wheel. I rented camper trailers from Rec Services in the military, had a K5 Blazer and later an F150 w/tow package. Now thinking about a Sprinter (Dodge Ram or Mercedes) with a diesel converted to motorhome and a trailer for a car. That way I could either bring my classic along for a shows or the Miata for racing someplace.
Have a friend with a class A that flat tows a Jeep Liberty. He had the Liberty modified for flat towing. Not sure what all that entailed though.
