The offset is secondary to the fact that it's not enough wheel width.
You want a 15x8 minimum on that, 15x9 is actually ideal.
But to answer your original question: 15x7 +20 would fit nicely under the car.
I'm running 225/45-15s on the DD right now, mounted on 15x8 with a +36 offset. No rubbing in the back, untouched fenders. Fronts are rolled so I don't know. I just put +3mm spacers on the car to let me run a certain secret brake kit, and now I get a little scuff on max compression.
There's your data point. I figure that a fender roll would happily swallow the extra 1/2" from a +20.
Personally, I like a 15x8 on a street tire in that size. 15x9 is the track fitment.
I'm running a 205/50 R888 on 15x8 +20 wheels at 4"/4.25" pinch weld heights.
My lips are rolled flat and pulled a bit though, so I'm not as good a comparison point.
