I say bone stock because I always have big plans for my cars, and I never actually do anything.....(I change the oil, and other regular maintenance)
3 series. Your choice of generation.
Does this have to be fun? Or just drive?

One of them there Nissans fits the bill. Or an RX-7, but you might not get the 20 mpg.

Another vote for 944 or 3 series
944, E36, E30, Mustang, Camaro, Firebird.

3 series.
I told myself I wouldn't become a BMW whore, but it's really hard to beat. Parts are reasonable, as long as you don't have to do something like rebuild the motor/transmission. All the little bits and bobs are well priced.
early c4 can get you a really decent car for 3k with the reliability of a small block chevy. but no back seat. i've used mine for road trips before, was a bunch easier before i got married because the amount of stuff for a weekend trip expanded tenfold versus what i needed for just me.
but i think the 3 series bmw sounds like a decent option as long as nothing blows up and requires $BMW$ parts.
i think my ultimate vote would end up, all things known now(tiny back seat) would be a 94-97 v8 camaro/firebird. i've been seeing lots of nice LT1 cars in the sub 3k range.
E36 5-speed sedan with sports package and LSD option. A bit more practical than the 4-cylinder Porsches or 2 door Nissans. I like how four race tires fit in the trunk. Parts are cheap. Lots more E36es than E30s in the self-service junkyards around here.

Oops not very awake! Mk3 Supra. Enough of them out there that you'll eventually find a good one.

Thank God, I thought I was the only one. (LOTS of big plans, but a very small bank account are the main reasons.)
Anyway, I also vote for any 3 series you can find that "does it" for you. As a "bonus, the 3 comes in pretty much every bodystyle except a pickup truck.
You can pick from any of the Japanese sports cars from the 80's. 240SX, 300ZX, Supra, RX-7...
