For optimal "braking" it's best to use no gas at all, just put it in neutral like you're in a spin.

he definitely was praying before he pitched it. You can hear him say oh E36 M3 when he tries the brakes on the straight, waits a heartbeat, then initiates the flick.

You don't use throttle to drift, you use throttle to come out of a drift.

That's if you're driving a FWD car, in which case it's technically not a drift.
You definitely do use throttle while in a drift, and unless you're driving a rear-engined Porsche, lifting off the gas will help you straighten up faster.

My bet is he was still on the brakes the whole time. When the car got a bit sideways then there is not nearly as much force for the brakes to overcome so then the wheels lock.
And for clarification, while in a drift, massive throttle application keeps the rears spinning and therefore keeps them in a low traction state. small throttle application can cause weight shift to the rear and increase rear traction.
Taking your foot off the gas 'stops' a power-induced drift because the rears spin at ground speed again and regain a massive amount of traction. Taking your foot off the gas 'starts' a trailing throttle drift because it causes a sudden weight shift to the front, reducing the rear traction.
