I would add work gloves.  Never know when you'll be grabbing something hot under the hood, or I've helped with tech a few times.

Contractor (garbage) bags - heavy mil, useful to stuff things from car into in case of rain. 

Rain suit - umbrellas not allowed while working course. 

Hooded Sun shirt - better than sunblock, especially if, like me, you tend to forget to reapply.

Extra socks - useful if wet, or just for sweat. 

Waterproof shoes - KEEP FEET DRY 

Or- I admit defeat and take sturdy pool/beach swim shoes and accept wet feet that I can dry off for race shoes at run time. Less miserable than wet sneakers.

Bug Spray - obvious 

Microfiber towels - useful for everything, extra useful to put in cooler water and wipe down with on a hot day. 

Baby wipes - useful for everything

Even just for shagging cones, those things get scuzzy. 

When I did flagging school I was given one of THESE , one of the best things ever as far as I'm concerned. One stays in my autox bin. 

(I tend to store the essentials in a plastic bin that will fit in the car, so I can just throw it in or out of the car easily)
