I spent $1000 back in the mid 70's to strip and de-chrome as much as possible my pride and joy and then repaint the drab factory color in small metallic gold Imron epoxy paint. When I went to pick up the car, it was sitting in fresh new snow in the bright winter sun and it looked like it was gold plated. About 2 months later while parked on a dead end street, someone bashed in the rear quarter panel. My only concern now is, is there even any paint on it?

The rarer it is, the more original it should look, so people have a chance to see what it was supposed to be.

Do I care? I care how it affects the purchase price, and if the changes are changes I would make myself.

Buying from someone who insists on correct finishes and parts, means they cared about the car more than average, and it's a good bet they took good care of it. I care from that perspective, a lot.
