Any reason why to continue use of wood and not a composite such as tree or timbertek?

While definitely more expensive, it seems like a "one time" job

As noted, expensive. Its also heavy, not very stiff, and the individual boards lose shear stiffness relative to the big panel (keeps the boat from racking). I've seen people do it this way, and I'm sure its fine too, at least for small rivers & ponds. Saves the work & cost of covering it with something.

Greenwood XL or similar is really rot resistant, inexpensive, and simple.

For the transom, I did use Meranti marine ply, and drilled/filled/re-drilled plus glass and faired. With cure times that was a lot of work & time; I was tempted to weld something up out of aluminum.
