Any number of straight 6 BMW engines would look good in there, or (before frenchy pipes up) an old Jaguar straight 6 would look just great under the hood. Depends on whether you want power or looks. If power is the main target, a nice LNF 4 cylinder tuned wherever you want it (260-500 bhp) would work.
Anything will swap, depends on how wild you wanna get.
Cut out the firewall
Cut out the fenderwells
Cut out the tunnel
Cut out the trunk floor
Backhalf it and install a 4 link and DANA 60 or Ford 9"
New frame stubs and install a Mustang II front suspension
Install engine and trans of your choice
Boom!
