Looking at that video, once you cut the roof out, you can use the existing roof and frame u=it up the the height you want. I would definitely cut the opening behind the seats as that will help with structural strength. I.m looking forward to seeing the build.

There's a factory headliner that stops about right in line with the back of the seats/side door opening. I'm going to cut off the roof from there rearward. Although I'm going to cut it lower/closer to the edge than that vid. Rather than cut off the roof bows like they do, my plan is to drill out the spot welds & remove the entire bow. That'll leave a flat(ish) ledge that I can weld brackets to & attach the new top to.
