I'm pretty sure the site I got directions from was written by a guy who broke his own face doing a garage door spring.

Never understood the fear of garage door springs considering all the other things people do that are exponentially more dangerous and statistically higher to get yourself dead.

Ive done a bunch, still have all my fingers and all my toes.  Take your time, be careful, get the right tools, so on so forth.  Then again I work on industrial equipment that will get you dead in a right hurry if you make a mistake, so its sort of second nature.

Are people working on them with the door all the way down or something?

I've replaced springs and dealt with jumped cables and stuff all the time and never seemed like I was working on something that needed to be defused.  Maybe I have just been blessed with getting to work with fairly light doors, that can overtravel a lot in the up position?

Some doors can run past the tracks and I guess give you a little wiggle room, but in general you need to service the springs with the doors down.
