Guesses as to why? Do they just want to sell whole engines only? People damaging too many other parts removing these ones?

I am guessing someone does not know how to use a spreadsheet, or check what they've ordered to be printed out and laminated.
Employees at junkyards might not be the epicenter for tech savy employees.
Too much loss on everything else? Pull apart an engine to get the camshaft and now the rest is effectively useless. Not sure that logic follows with a cylinder head, but whatever
I'd guess it's a losing proposition sell used pistons, rods, etc. There's a lot of labor required, and then you can only sell parts from the engine rather than a complete engine.
They only want to sell assemblies.
They also love cutting every stitch of wiring and hoses off... even if the hoses are integral to the engine like the oil cooler hoses on a 2GR-FE engine. My "favorite" is where I work, they ordered a used transmission, and they cut the harness off. Harness is part of the valve body and requires major disassembly to replace. So they sent it back and got another one... that also had the harness cut off. So they got a third... and then bought the transmission from somewhere else where the dismantler didn't have his head up his ass.

As someone who builds them, thinking of hacking VB harnesses gives me the willies.
That seems annoying, I used to buy Mercedes om603 cylinder heads to resell, and the rest of the engine isn't worth much, and the whole thing would go in the crusher otherwise.
I never really thought of JYs being much into selling internals anyway. Cranks maybe since they are easily refurbished and one big piece.
