I have one open, partially full container of gear oil from the last time I changed it (several years ago). Can I add the old stuff to a new bottle, or has it attracted a bunch of water by now?

No, gear oil, like motor oil, floats on top of water. So unless actual liquid water has gotten into the container, it's safe to use. Doesn't really go bad.

Brake fluid's about the only automotive chemical that's hygroscopic. That I know of.
