Go see Red Rock Canyon and the Valley of Fire. Make sure you plan it so you are leaving around sunset. It is a spectacular site. You will need a rental car but absolutely worth it.

Another vote for Hoover and the Imperial Palace. When I visited the IP last May, they had a Group 44 Audi Trans-Am car on display...made it worth not having the free coupon.
If it's of interest, In-N-Out have a store adjacent to their restaurant on the other side of the freeway behind the Strip. Good for some gearhead t-shirts for the wardrobe beyond the annual shirt available in the restaurants.

There's an outlet mall just outside of downtown. You coulda saved a few bucks.

We just did their show here in AC... great couple of guys and really simple how their tricks work... but I am not saying more
If you're into guns, there's a great indoor range on Tropicana east of the strip. They have interesting stuff you can shoot. I rented a Thompson w/ full drum when I was there. They've got much bigger stuff too.
