When I was in the country helping my sister with Granddad's funeral arrangements, I took a peak at the 530i stored in the garage.

I found that is low on coolant, but no evidence outside the car. Found the all the evidence in the interior, the heater core sprung a serious leak.

Now the ENTIRE interior is covered in mold. Can I rid the interior of mold without resorting gutting it?

You can kill the mold with a product called Concrobium. Its a simple solution of multiple things like Sodium Carbonate and TSP. The way it works is you spray it on and as it dries, the way the crystals form crushes the mold spores. It is the standard solution for flood recovery, mold abatement, and they even make fogging appliances to get it into tough places.

It will not harm anything, but it will leave a crystalline mess that can be wiped up with a damp rag. It also won't remove any mold stains. For that I suggest a light bleach solution that bleaches out the stains but doesn't eat the upholstery.

That stuff sounds really cool...

When I rescued the E30 (which had several inches of water in the footwell and a pretty darn green interior as a result) I ended up pulling the carpet and seats, using grapefruit seed extract solution on all the leather and vinyl, and ditchdigger helped me out with a steam cleaning of the carpet...

I was worried I'd have issues with HVAC or other pockets of residue, but it seemed to be just fine; didn't smell funky, never saw signs of return...

Oh, and concrobium is available at Home Depot. Its in the cleaning aisle. If the store has a rental department, they probably have some up there to go with the mold foggers they rent.
