Anything made after the 60's will be ultra rare in North America. The XJS was available with a small (relative, 3.6L) six and a manual in europe, but is not something that was officially sold here. I think numbers in the US were barely above single digits, but some uncounted grey market cars are assuredly floating around. I guess the short answer would have been "try to shop european parts suppliers". The older stuff will occasionally turn up on CL in a variety of parts cars and restoration projects. That's all I've got on the subject, I'm sure others will know much more.
There is a kit to put a 300ZXTT transmission behind a Jag 6. I've raced one in Lemons and it was fantastic.
There's a company in Florida that makes a bellhousing that adapts a T5 Mustang trans to Jag engines. Here they are http://www.5speeds.com/modbell.html
Best way is going to be a kit to adapt a different trans.
Manual jags are quite rare here in the US.
Frency might have a few laying around though, if anyone does.

Use a T5 and either make or buy a bell housing. It’s not that hard to make a Chevy bellhousing work on the Jaguar. Ask I’ll walk you through it.
Frankly I’d go for the later all aluminum six with the 4 valve heads and do a trans swap. A hundred more horsepower. Can put a factory supercharger on For another 150 hp. 200 pounds lighter. Really reliable and durable. I’ve seen 300,000 miles on one that had never been apart.
Want a really wild idea? A V12 Jag will fit anyplace the old cast iron block 6 will and its 25 pounds lighter. Your choice, factory carbs or fuel injection. The same T5 will work very nice behind it ( and I’ve got the pattern for the adapter handy)

Well, the car got sold out from under me. HOWEVER, my xjr6 still needs transmission work. It might be capable of being repaired easily but having the ability to put a chevy pattern trans behind is nice.
