Honestly man, the 1989-1994 240sx was a fantastic car for me. The whole feeling I got driving them was invigorating. The cockpit is moulded around you, you get the feeling that this chassis was designed for YOU specifically. I guess that's why I've owned 3 s13 chassis' and four s30's and one nickel and dime.
Between 1990 and 2005? easy, a 1991 E30.
My experience has been that the newer the car, the more isolated the driving experience, even though they may have more ultimate grip or speed. I can't imagine ever selling my E30.
Price range less than 10 grand. My e30 is just lacking umph! Needs more power up hills and passing people. Driving up a small mile long grade the other day, and a minivan passed me effortlessly, with a cargo carrier and a bunch of kids watching finding Nemo, while I was grabbing a lower gear.

M52 is the good answer though. Less money than an S5x, more sources for lower milage engines (including an alloy block option) and it's "enough" power. Also better for boosting than an S5x if you want to go that way later.
If you have the facilities to perform a swap, M5x; with a preference to M52 (I can't remember how much extra work is involved with M54).
M52 + S52 cams and OTS tune + M50 manifold + exhaust work = ~215+whp ~200tq
If you can't perform a swap, E36. E36 M3s are within your price range.
Or you can throw JY turbo kit at your current E30 . . . Lots of options.
I may be in the market for a "slow" E30 if the timing and location work. I've got a young driver coming up.
An E36 is right up your alley. An E46, besides the M3, can easily be had for under $10k too.
Infiniti G35s in both the coupe and sedan form can be found in the RWD, 6MT configuration. The early models have also dipped below $10k. I spend a decent amount of time in G37s and I'd say the road feel is just a bit more numb than the E46, but nothing to complain about.
