Spent today trying to get my Z aligned after replacing balljoints and wheel bearings.
Took it for a drive after an attempt and the steering was suddenly very light. The car does not have power steering som Im not sure what to look for.

Too little caster will make the steering very light. Double check the toe as well.
As far as setting caster at home, on a lot of cars, you can just go by feel. As long as it tracks straight and feels good, the caster is "correct".
Its unlikely that you got camber off, but higher camber makes the tire pivot on the inside or outside of the tread instead of the whole patch being on the ground.
Toe being off usually shows up as being light on center when moving but harder the closer you get to lock
