Going for an interview Monday to work in the bus maintenance dept at the airport 30+ miles one way. I want something in the 35+mpg range that as a bigger guy I wouldn't look and feel like a complete tool driving. 4 wheels not 2 and preferably under $1000
Late 80s/early 90s Civic or CRX if you can find out that hasn't been completely riced out. Going to cost you more than a grand, though.

i had my 97 Cavalier 2 door with the 2.2 pushrod motor/5 speed manual up to just a fraction of a mile per gallon under 40mpg when i sold it... paid $300 for it with a blown head gasket... fixed it and drove it for 3 years, doing different aero things to try to save a little gas- just taking off the passenger side mirror was worth a mile per gallon all by itself, and blocking off the grille and making an air dam out of the bumper of an 89 Grand Am was worth a solid 2mpg.. was going to do some lawn edging side skirts and throw away interior stuff, but my cousin needed a car so i sold it to her for $500..
i'm a "bigger guy" at 5'11" and 245 pounds, and i never felt cramped or uncomfortable in any of the Cavvies that i've had..

Carpool. Double your MPG instantly. Which means you only need 15 mpg. My 1966 Cadillac would fit the bill.

Gen 2 Escort? ...if you could find one that has been taken care of and not beat to hell and back. Slow, but 1.9 liters + a 5 speed gets me 30 something in town/highwayish driving. 40+ on the highway. The best thing, though, is the non-claustrophobic interior. With the boxy design and big windows these little cars feel huge inside. I'm tall so I appreciate that. It's reasonably entertaining to toss around too.
I second the 2nd gen Escorts. You might even consider the 3rd gen but I really have no experience with them. Lots of room, easy to work on, parts are plentiful and cheap, and upgrades are available from a wide range of Ford and Mazda cars. My only real beefs are the cupholders suck and the heater core is a real pain to replace.

Saturn 95-02. You can have 2 or 4 doors, even a wagon. Single cam 5 speeds will hit 40mpg, twins the high 30's. Cheap to buy, cheap to maintain. It will use oil, just keep adding...
Yeah,I'd be all over that corolla. Shoot I would be buying it if it were in TX and not NC. It checks all of the boxes for you.
