The gears may be worn, the detent spring broken. Linkage maladjusted.

One reason VWs pop out of gear can be up/down movement of the nose of the transaxle. Is yours snubbed down well? My Baja Bug 30 years ago had a bit of a problem like this, and a new set of motor mounts/transaxle straps cured it. The movement can be either from bumps or from on/off throttle.

914 owner, kinda sorta the same. Look at the mounting bushings. Like jpg said, a little twist and you're back in neutral.

Bushings are easier and cheaper than a rebuild.

I know this sounds too simple but have you tried adjusting the shifter. My grandfathers car had the same problem so i moved the shifter a little to the right and re-tightened the bolts and the problem was fixed.
