I learned to do exactly what you want by starting with a 90 Civic Sedan. Electrical, body, suspension, engine mods...all cheap and readily available. Plus, a trip to the pull-it yard is always fun if you find and Si or Integra to pull from. Lots of online support as well.
If you only have the multi-point sockets, go and get a good set of 6-point impact sockets. This will greatly reduce the times you round off a bolt head and break sockets. Harbor Freight is fine.
