Can I use one of those cheap Summit polyurethane seats as a passenger seat for autocrossing and have an instructor ride in the car?

Legality of the seat depends on the rules for your class.

It is considered bad form (or worse) in some circles to offer less safety protection to the passenger/instructor than the driver.

Most require the passenger seat to be equal to the driver seat, along with the belts.

Well it has a Kirkey aluminum drivers seat and a five point harness and it is getting a 5 point harness on passengers side.

For a road course, sure. For autocross I wouldn't really expect that to be an issue.

the XJ-R has one of the plastic seats with the cover for a driver's seat. i like it pretty well for a challengeable seat. but it needs a good shoulder harness setup to work at all since there's almost zero upper lateral support and its a little slippery even with the cover. but it's pretty light, super cheap, reasonably comfortable, and easy to get in/out of for a variety of shapes.
