Take a lateish model Prius and a 70s Eldorado/Toronado....cut out trunk floor.....replace stock Prius powertrain with fuel cell and giant radiator.......hidden wheelie bar.......nitrous......massive rear tires.....
A nearly "traditional"(read, non gaudy chrome laden pile of stupidity) Jeep hot rod, notched frame, lowered to 4" between frame and ground, widen rear track to put tires completely outside fenders, suicide axle made from stock stuff, mildly hopped up 4.0, 5 speed.
I've also always kind of wanted to take a 2JZ-GTE, Grind anything identifying of it, stuff it in a Nova or Falcon and try convincing people its some top secret prototype GM or Ford engine.
The one that's been stuck in my head since we discussed it several months ago:
VQ35DE or VQ37VHR powered 240z - Wife is actually on board with this

Building a E-Rod Exocet
Balls out VIP style G35 (so JDM yo!)
Another idea I've had is trying to do up a '90s era Accord or Celica as a late '90s street racer throwback. Widened 15" steel wheels up front, 15" Momo Arrows on the back (not the botched poseur look with stock steelies on the front and 17" heavy alloy rims out back), PIAA foglights, lowered about 1" with Eibach springs and Koni shocks, and some period correct speed parts and graphics.

Miata floor pan and mechanicals combined with a widened/lengthened Nash Metropolitan.
As for the Riv, nice idea.
Along those lines, one of my wish list builds is a 4 door bullet nose T-Bird built like the Lincoln from "Hit and Run"

The Quad 4 was a nice engine in it's day, but they didn't come out in time to be used in the Fiero (which was almost toast by the time the Quad 4 was released) and they are now a dated design, although good looking.
In many ways the Ecotec is the Quad 4 of today.
Nice thing is that the Fiero has room for V6 swaps as well as V8s if you don't mind a bit more cutting.
I went the way of modding the stock engine through larger capacity and turbo rather than doing a swap.

some sort of D/E-Mod middy using essentially a megasquirt'd Esslinger 2.3L dirt midget motor bolted to an appropriately robust transaxle, bolted into the back of a big LeGrand-esque chassis, wearing a Europa or Ferrari 208GTS fiberglass body
build a D-Mod Locost using as nasty of a 13B as the rules will allow, massive slicks, and stick it under an Elva Courier replica body with an air dam/splitter and a sizable lexan spoiler
