Back in the mid 80s my fabricator buddy built a 3 wheeler using a Yamaha 650 maxim drive train. I drove it numerous times and it was every bit as stable as any street car. The key was the really wide front track. He autocrossed it once and tech was nervous about it so on his first run you yanked the hand brake and did a bootleg turn. That solved any nervousness.
Just like any vehicle if they are well designed there is not an issue if they aren't there is. The problem for track days and the like is so many 3 wheelers are poorly designed that they've gained a bar rap.
