I need some advice. Planning on doing a PCA track day at Sebring/Roebling with a stock Cayman S and looking to purchase some tires that I can drive there and back on. Any thoughts?

There are so many choices and opinions that it is difficult to pick. A dedicated "summer" tire with a Z rating would be what you should be looking for.
How many miles are you planning on putting on the car with those tires?
If it's more than 5k per year, I'd go for a RE01R, AD07, R1R, ECSTA XS type tire. If it's less, than the R888 or NT01 are very good.
I'm Looking for a "street legal" race tire I can mount just for the weekend. I plan on putting my oe tires back on when I get back home.
Are you looking for "street legal" slicks? If so, Kuhmo v710. If not, Nitto NT01 (you could drive the Nittos on the street if you wanted and wouldn't die if it rained).
I'd feel the most comfortable recommending either the R888 or the NT01. Both could handle that commute with ease. We drive our NT01s all over the place.
Is this going to be your very first track day? I would recommend sticking with the stock tires, or other UHP street tires, for your first couple of events.
I love my NT01s, but I did a half dozen events on street tires first. I'm glad I did. I learned what the limit felt like, when the limit was lower.
You will be slower on street tires, but that means you will have more time to think about and react to what the car is doing. Take the time to train your reflexes.
NT-01, R888 or RA1. They're R compound tires that will take the abuse of the track without overheating and coming apart on you, and you can drive to and from the track without concerns. Heck, I've got two cars that run on those tires all the time. They're also friendly at the limit and won't bite if you step over.
I learned on R compounds. I don't feel it did me any harm.
