My '12 TDI currently has 205/55/16s on it and will need new rubber shortly, was thinking of going up to a 225/50/16. Any reason not to do this?

Potentially worse gas mileage, maybe your wheel isn't wide enough for it.

Other than that? Nope. That size fits awesome on a 16x8.

Hmm looks like I have 16x6.5

That is pretty narrow. May be time for some new wheels as well.

Might rub your fenders at full lock or at full compression or something. Usually not a huge deal, especially if the stock size is 205.

Yeah no way i'd put those on a 6.5" wheel.

Also no way i'd buy new 16" wheels, because 16" tire selection sucks and is often more expensive than 17s.

Go 17s. They'll look good on the TDI.

there is a thread around here somewhere on making fender flares out of trailer fenders..
