Meh. The main problem with the Jag V12 is the supporting parts around the car, the difficulty of working on it and the massive vaccuum system all of which won't be in the car but I am leaning toward the Jaguar straight six.

I have to vote 6 banger Jag too. It's just so cool looking and has a ton of aftermarket support. With boneyard stuff you can go either carbed or FI, or if you look around you could probably come up with triple Webers. The cam covers polish up really nice. The V12 would look cool, but not a whole lot more power. It could weigh as much as 200 pounds more, too. http://fixrambler.com/engineweightchart.txt

For the first time, LSx is NOT the answer.
I submit that for your application, you'll specifically need a triple SU set-up on the Jaguar XK engine.
Edit: Since what you're looking for, by my interpretation, is a wide angle DOHC engine, there's also the Toyota 5M-GE. Aside from that and the Jaguar, I can't think of anything terribly easy to come by.
5MGE wouldn't be a bad choice. You'd probably want to do something with the valve covers, maybe mill off the emblems and polish them. Then it would look pretty vintage.
The Pontiac straight 8 was a flathead, that one in the picture above looks like a Buick. The Pontiac was a good old engine but it wasn't built for performance.
