If I was in your shoes, I would hypothetically keep the minivan and company car, then sell everything else. Then, I would pick up a head-turner weekend toy that I don't have to rely on. Something like an AC Porsche, an XJ convertible, or some gorgeous Alfa. A dinner-date car worthy of parking right in front of the restaurant.
My completely unsupported opinion is that $15k and 15-20 years old is a buyer's market for fun cars. Too old to be reliable, too new to be classic, too expensive for most people to have a cash buy, and too cheap to be an investment. That's Boxster S territory!
Having cars sit around doesn't bother me because I mostly own the type of cars that would be WAY more likely to be given up on and crushed if I wasn't hoarding them. I'm singlehandedly keeping most of them 'in existence'.
Also stuff doesn't rust down here. The only thing that goes bad from sitting is paint jobs and tires. Or in rare cases a mud wasp will build a nest inside your engine and seize it.
