The BRZ/GR86 did not fit me well. In fact, I tried GameboyRMH's at the $2000 Challenge one year.
As an aside, I can squeeze myself into a new Miata, but just about every part of my body touches something. Definitely not doable with a helmet.
All of our picks should fit me with a helmet.
One other factor to consider - some of us prefer sitting more straight up than others. For example, I sit nearly straight up. My wife, on the other hand, leans back quite a bit.

Roughly 6'3. Still have a 35" inseam so it is all spine and ankle issues.
Which are a lot of why I prefer to have a nice slouch with my knees up a fair bit. Sitting up straight just kills my spine and makes driving unbearable after a half hour or so. Plus that's the only way to get sufficient headroom and be close enough to the steering wheel for a 90 degree elbow angle.
I have never driven a car where I could sit with my knees under the steering column AND work the pedals. The pedals are always too low unless one wants to apply pressure to the pedal lever and not the pad. My Quantum was the worst for this, using the clutch required a toe-point motion. I only have size 11/12 feet so I cannot be alone in this! (An aside, this is why 911s and other cars with floor pivot pedals like 2002s are WONDERFUL to drive!)

I used to have an FC, it was my first RX-7. It was a GXL with leather interior. To drive it, I had to have the seat all the way forward and the seat back all the way back crushing the bins.
Then I got the '80, which fit like a glove. The only Mazda that fit better was, oddly enough, Evan's NA6 Miata with hardtop. Room for days in that car. The hardtop is key.
Now, the ND RF on the other hand

You've shrunk to my dimensions, I'm also 6'3" with long legs and a shorter torso. I know what you are talking about getting my legs under a steering column but with the same size feet I can't say I've struggled with pedals, I doubt I've driven as many different brands as you. Mostly Subaru's and BMW E28's.
If you ever make it to Southern Ontario I have some bikes that would fit nicely and you're welcome to try the E28 if you haven't driven one.

I used to work in a place with a lot of E30, E28, and E34 content. And A1/A2 Volkswagens.

No idea how very tall people sit in cars. I wish the nicer trim levels didn't force a sunroof on most cars.

Yes. Manual seats. Manual transmission. Minus sunroof. ... Totally agree!
I'm 6'4 but with only a 32" inseam, so all torso. The Elantra N (with MT - no sunroof) by far had the best headroom of any track type car I've sat in (including most on this list). It even has an extra indentation in the headliner over your head. It's really the only track car with an interior that I fit in with a helmet on.
Maybe I'm weird ("maybe??") but the sunroof never seems to play into helmet issues for me. It is always the door sill or whatever you call it, because of tumblehome. Cars would have a lot more helmet room if the seat could be moved inboard.

The Supra might be a good example of this. For me to enter it with a helmet, it takes some planning. I go headfirst in with it on and feet first on the way out. I prefer wearing a helmet entering and exiting a car as it's quite difficult for me to take a helmet off/put one on in a car.
The low roof line / gutters on the GR Supra sure makes you wonder if they should have or why they didn't try butterfly doors, but that may have effected the torsional rigidity or required additional engineering that pulled it too far away from its Z4 foundation.
997/991/992 they all fit tall drivers. I sold my 997 to someone 6 foot 8 and they fit just fine even with the top up. They were very happy to find that it was comfotable for them.
Fiesta ST without moonroof fits me well. 6'5" proportional. Wouldn't consider it a sportscar though.
That list is basically a list of the only cars I would consider buying anyway except for the Mustang.

This is interesting. And others have said the same. 3 years ago I drove BIL's 996 Carrera4 ragtop from ATL to HHI and I couldn't drive it back. Just way too uncomfortable. Everything was too small.
Curious and nice to know that other ones are actually tall friendly. Is 996 known to be an anomaly?
I'm 6'4 and have trouble fitting in most cars too. I actually have a 986 and it's fine, I absolutely did not fit in the Supra when I sat in one though. The GR Corolla and WRX were definitely good when I sat in them too.
BTW: I wanted to add another one to this list in hindsight. The Alfa Romeo Giulia has an incredible amount of headroom.

If it's any consolation, you exit the car far more elegantly than I do. 
I'd still rank the Supra high as far as headroom. The Giulia is up there, too.

I've always had legroom issues with Corvettes. The C8s do feel roomier, though.
