I've never seen a side car with a steering wheel. I assume that it's just something to hang on to.
That big wing nut in the middle of the handlebars on the lead bike would make quite the impression in the rider's chest. I hope that never happened.

It looks like the steering wheel is attached directly to a one sided steering rack

Also, when you autocross a Camaro with an automatic, you can transition faster from full throttle to full brake if you apply the brakes as you are coming off the throttle.
Not my car, not my trophy, but representative of the idea...Mine never lifted a tire, though.
