400 ish usually works for me, but I've never tried the brown sugar bit so that may change things some.

No. In restaraunts bacon is baked on sheet pans in ovens, less mess than pan frying, less shrinkage.

Many restaurants put down slices of bread first, to soak up the grease. My guilty secret... while working as a waitress, I often snagged one of those crisp, grease soaked pieces of goodness.
Anyone make bacon gravy? Do it just like white sausage gravy but before you cook the bacon, cut the rashers up in to bite sized portions.
If I'm baking, I start my bacon in a cold oven and cook it at about 325. Most of the fat renders out and the bacon gets chewy without passing over to thoroughly crispy. Bacon baking is half about the bacon and half about recovering as much fat as possible.

Your house will smell like a campfire for a week. The fat from that benton's bacon is like liquid gold. Yesterday I pan fried pancakes in a half inch of bacon fat and covered them in maple syrup made from the maple trees at my parents' house. It tasted about how you'd imagine. Then I took a long nap.

This actually makes me wish for winter time, and a lazy day with not much else to do but shovel snow. That's a weird feeling for the middle of August.
Cut cornmeal muffins in half. Drizzle with real maple syrup, and fill with crispy bacon... then stick back together. Eat as many as you possibly can. You're welcome :-)
