Dan Carlin's Hardcore History is awesome as is his Common Sense one. I also like Stuff you Missed in History Class. And, of course, The Grassroots Motorsports and Classic Motorsports Podcast.
I'm interested in answers here, too. Seems it is hard to find podcasts that are consistently interesting. Many have poor audio and lackluster organization which makes them less than riveting.
FWIW, I'm a British history buff and have several I listen to in that vein. Probably not everyone's cuppa, though.
At risk of starting yet another love/hate battle over the Tappet Brothers, I do like listening to Car Talk.
For fun, I listen to Ground Zero with Clyde Lewis. Interesting topics from UFO's to politics.

If you want to hear some really freak stuff then check out Savage Love with Dan Savage. Not for the prudish or for family listening. Another raunchy one is Guys We F**ked. Two comediennes interview ex-boyfriends of their's. Quite racy.

I'm not sure how popular this would be, but if you want a bizarre podcast done in the style of a newscast for a dystopian future, go for Welcome to Nightvale. It's what I listen to when I run and it's excellent.
startalkradio.net is Neil deGrasse Tyson's, and who DOESN'T love him?! Then, I hear there is this awesome internet radio station that also podcasts everything. I think it is TalkStL.com or something like that.
I listen to one called The Hard Drive Garage. The guy searches craigslist and the internet for horribly customized cars and then riffs on them MST3K-style. For something so heavily based on visuals you can't see, it's surprisingly entertaining.

Just gave a few episodes a shot. It comes off as an old timey radio show to me.
I am half heartedly looking for podcasts that interest me that aren't all music but none really grab me. Even if I love the comedians or whoever is doing them they leave me a bit cold. Bianca thinks "Who Charted?" is hilarious but it doesn't do anything for me.
My usual go to podcast is the Mal Thursday show and also his Texas Tyme machine.
Unmentioned so far: Backstory (history), Slate's Political Gabfest (if you're into politics), 99% Invisible (built environment/architecture/design/whatever), Nerdist (does what it says on the tin), DecodeDC (more politics), The Moth.
If you're in the mood to concentrate, Melvin' Bragg's "In Our Time" is occasionally amazing. Oh, and The Long Now Foundation's "Seminars About Long-Term Thinking" has had some really incredible talks (Nicolas Negroponte, George Dyson, Cory Doctorow, Steven Pinker, E.O. Wilson, Lessig, etc).
Like DnD? Like Brian Posehn? Then listen to Nerd poker. A bunch of dorks/comedians play a game where you get to be a dumb half giant with an axe. What's not to like. Another good one (better really) is Crit Juice. This time the players are drunk and the editing and sound is flawless. Very entertaining!

I’ve listened to Big Picture Science (formerly Are We Alone) for years. It’s hosted by Seth Shostak who’s a Principle Scientist at SETI and he interviews top people from all venues of science.
