Camopaint's thread reminded me.
Evernote was my go-to for a decade. Free, no ads, synched across all devices, and truckloads of storage. I used it for audio notes, scribbled notes, text notes, composing poetry, etc.
First, they took away the multiple synched devices. For the last year, they've had multiple pop-up paywalls saying I can't make more notes with an "are you sure?" popup after each one. I can't add anything without a paid subscription. berkeley all the way off.
What's a good alternative?

Via android I use a free program called Color Note. I'm not using it to it's full extent more than shopping lists, notes of project dimensions, etc.
But, it has never been intrusive or tried to sell me anything.

I use keepnotes. It's a Google program probably already on your android.
We use it for lists and notes, and you can share them with your contacts. Ie: Dana, the teenager, and I share access to the grocery list, while me and mechdave share a list of car parts and projects that need worked on.
Not so great at hand writing, not sure about accessing it from not a phone either, but you can add pictures and videos and I think audio to the notes.
BTW... Android. Forgot to mention.
Another vote for colornote for Android- Ive used it for years. It was great for shopping lists as we could both add to the list and sync it. It became a problem when my kids convinced my wife to switch to that other fruity phone.
We tried evernote for like 2 days as it works on both Android and iphone. when I started getting all these security warnings that users on SE Asia were attempting to log in. Game over...
John/Rev, do either of them work across both android and iphone? ColorNote used to be android only.

They call it Google Keep now, but I guess it does work between the two systems. I don't actually know anyone with an iPhone these days too try first hand.

if you have an office 365 license what about onenote? I use it across multiple devices and it works flawlessly.

I do have a 365 license... through work. I can just imagine how losing the last 12 years of data would feel if I resigned or got fired.
I use Keep on my iPhone and my desktop.
If I am doing something beyond simple notes, I'll just use a google drive doc of some sort.
Another vote for Joplin here. It is the most Evernote like alternative. Only issue out of the box is that it doesn't sync across multiple devices.
As Gameboy said, if you can self host some cloud storage for syncing, you are all set. I'm going through this same exact thing right now.
Re: One Note - it is a mess. It's probably ok if you are trying to do more technical or mixed graphics/text type notes. But you can't copy/paste text out of it into other apps. Text isn't stored as text, but as an image. Not helpful if you are trying to take notes on procedures so you can copy/paste for further use.

Fortunately, Apple cloned all of its features into the native Notes app. Does Android have anything built in? If so, might be worth a try.

yes, its called Keep as mentioned above. And the important thing is, you can use it on all your devices, not just Apple.

a home license is 99c a month and gives you everything you need including oneNote and cloud storage. I will admit to spend $12 a year when lots of people have already recommended free versions seems silly but if you had it, i swear by oneNote and use it for everything from groceries to my electronic filing cabinet (oneNote has a Print to oneNote so I put all of my important receipts and such in a section) additionally it has the ability to password protect sections and password protected sections are encrypted.

Looks like that problem of text being stored as an image is a bug that was being worked on late last year, it only happens under certain conditions:
