Now that I'm back from PRI, pretty much all of my time that isn't accounted for by work, the gym, or holiday social events will be spent making cookies. Tonight I'm making the oatmeal shortbread cookies that inspired this thread last year.

Depending on how much spare time I have tonight, I might run a few batches of frozen cookie dough balls that I prepped last week through the oven as well. Those will be oatmeal date cookies and kitchen sink cookies (crunchy peanut butter, oats, chocolate chips, pretzel pieces and flaky salt on top). Apparently I gravitate towards oat-based recipes. I find they have a more interesting texture and a more satisfying bite than flour-only cookies.

I'm also going to try to squeeze in a batch of Claire Saffitz's Pistachio Pinwheels sometime this week.

Update: in my haste, I accidentally put too much butter in the oatmeal shortbread, so they came out ugly as sin but still taste ok.

Cookie making has started at my house, first up 3-layer cookies (Venetians) my first time making the family recipe, I think I should have gone a little heavier on the coloring but flavor is really good.
