My phone has an integral recording option, maybe yours does also to avoid the external device. I've never tested it, but as soon as I get a call or make a call, I get a soft key that says 'Record,' which I'm assuming records to internal memory. I also have a MicroSD slot, so I could do a direct transfer to the computer. I'd guess that most MP3 phones have this ability.

If she is breaking out your windows, set up a video recorder that is motion activated. Ignore her calls, when she turns out to break the windows have her arrested for Criminal Damage.

Her credibility will be forever destroyed.

Is my hardware solution going to work? It seems to simple, but sometimes "too simple" is actually just right.

I don't see any issues with what you described. Some mic inputs have gain applied to them automatically so you may have to play with mic input volume and output volume from the recorder. Other than that, should be good to go.
