Cast iron for steaks. Put the pan in the grill, get it smoking hot, use that to sear the steaks, then cook over the regular grilling element for the rest of the time.

If you're feeling daring, you can also use the cast iron with wood chips after the meat is out. Move it to the top rack. Make sure you leave the juices from the meat in there and make sure your wood chips are damp when you put them in so they don't immediately combust.

Been working out pretty well so far. Electric hotplate + a few flower pots and odds and ends = electric smoker.

The last restaurant I worked for was a serious joint. Everything locally sourced, housemade charcuterie hanging in the basement, made their own bacon, broke down whole (well ok, half) pigs, they had some jerk making all the bread in house - hell, they made their own mustard and ketchup. They did all their smoking in an electric smoker about the size of a dorm fridge. Insert meat, insert wood chips, turn on, set temp, set timer, walk away.

When you're talking about smoking, heat is heat. The wood and the time is where you develop the flavor. Worry about getting those right, not tending the fire.

This electric grill idea intrigues me, but I honestly don't see it saving a lot of effort over gas, aside from having to swap cylinders occasionally. I use gas for convenience and charcoal when I'm serious about flavor.

I think you're referring to the Big Green Egg. A friend has one & loves it.
