Lotus 7 clone, likely a Caterham SV with as many lightweight replacement bits as possible. That, or a TDI Synchro Westie. Store the motorcycle in the back, camp in it, fuel it with WVO.

All kidding aside, if I could only have one car, that car would have to do it all fairly well, be reliable, and be fun to drive.
When I was younger and had only one RWD Corolla, with only a change of tires, I would autocross one weekend, rallycross the next, trackday the third, and take two friends and three bikes mountain biking on the fourth. It is slow but massively entertaining to drive, fairly reliable, fairly comfortable, economical, and can carry people in the back seat in a pinch. So I might have to stick to a boring old AE86.
To increase both the utility and the sleeper factor, a TE72 wagon shell needs only a few small mods to accept all the mechanical bits from the AE86 GT-S, and doesn't weigh all that much more. :twisted:

One car and one car only? Primer black turbo E30 318i. 300ish whp, LSD, coil-overs that can be raised in the winter and lowered in summer. It's RWD, spacious enough for four people, good on gas when it's not in boost (only 4 cylinders), has a trunk and space for crap, is reliable as dirt, plentiful junkyard parts, and looks damn good. And it's primer, so if it gets a scratch, you can sand it down and repaint it.
