Boxster and fuel economy are two words that don't go together. Mine hovers around 21-22mpg. Not fast either for any 986, even an S.
I don't see any age, price limits or definition of fuel economy.
How about the 11-14 V6 S197 Mustangs? This was from ours.
As a point of reference, I'm 6'3" and in my non-sunroof 2015 WRX, I have several inches of space between the top of my head and the headliner and I frequently drive it with big clunky size 12 work boots with no problem. My head touches the roof in my wife's 2019 Rav4 if I sit up really straight, so size isn't everything, you have to try the car out to see if you fit and most importantly, avoid sunroofs if at all possible.

I have a 2017 Continental, with the 3.0l twin turbo, AWD, 400hp and 400 ft.lbs. Loads of fun to drive, while maintaining incredible comfort. The absolute, no contest, best automotive seats I have ever sat in. I'm 6'5" and looked for months with similar criteria. In the end, the comfort and the seats won out over other car options.
And oh, did I mention the seats?? Took me weeks get all the settings dialed in. But now, a 4 to 5 hour drive feels like a quick trip around the block.

Depends on the generation...986 (and presumably 996) are terrible if you have any amount of torso length...in my 986 I was basically staring at the windshield frame and fitting under the hardtop with a helmet on was a real challenge. On the other hand, my 981 Cayman and my friend's 997 both fit me easily with room to spare and I actually feel like I'm sitting IN the car instead of ON it. For reference I'm ~6'1" but pretty much all torso. MPG is not their friend though, my cayman is rated 27mpg but I don't think I've seen over 24 or 25 on the highway. The new generation of turbo motors are rated around 30 and might actually be able to hit their rating, but the cayman 4cyl engines are garbage so you're pretty much stuck dropping $$$$ on a 911. ...not that a 911 is a bad idea, just an expensive one.
Model 3 - emissions equivalent to a 50-100 mpg gasoline car, nice shove into the seat, fits tall drivers well.

2011-2014 Mustang with the V6. 305 Hp, 19/29 mpg. The automatic is rated for 19/31 mpg, but it's an automatic :(

All I know is that most big V-sixes, like in minivans, get 16-17mpg. Most modern V8s can get into the 30s on the highway. So get a Corvette, not an Atlas.
I think the V6 Accord has already gotten a mention. Sadly, I think they stopped offering it? My wife's 2013 is an all-around nice car, gets mid-30's mpg, and if you put the hammer down, it's faster than you'd expect. But don't take my word for it:

QFT. I fit great in my wife's Outback. Once had a suburban.. and I was too tall for THAT. Never thought that'd be possible but the rear AC was on the headliner.

I have a long torso and fit in my R53 with several inches of headroom, but it's not exactly fuel efficient. I average 25-26 in mixed driving and 31 highway, but it also requires 93 octane, so the cost per mile for fuel is pretty close to my GMC Canyon. I would think many of the current mid to large sedans should be able to beat my truck mileage with comfort and power to boot and possibly use regular gas. I do enjoy the MINI though.
