Thanks for the response. I do love the knife, not least of which is because it was the first really nice knife I bought and it was bought with wedding gift return funds. It definitely made me respect a good knife versus the "$20 wood block full of jagged metal" type set I'd had before.

Useful addition to the discussion. 

I've considered having my kitchen knives professionally sharpened, I've only ever had my surgical tools professionally sharpened.

My current sharpener of choice is this Spyderco model.

I rarely use it. I hone my knives almost every time I pick them up, that seems to work pretty well to maintain them.

Fortunately, I do most of the cooking since the only thing that my wife will do with a knife is use it, then leave it for me to wash.
